Cheeses
Since 1927, Grande Cheese has been making the finest authentic Italian cheeses in America. Starting with the highest quality milk, Grande offers the freshest Mozzarella, Provolone and Romano that adorn our delicious dishes.
We also use Polly-O Italian cheeses to create our savory entrees. For nearly 100 years, Polly-o has been the benchmark of cheese and cheese products in America. That rich tradition has helped Candela create their own tradition and reputation as "the best pizza in town" for over 30 years.
Sauces
Our sauces embody the heart of our Italian heritage. In Italian cooking, creating the sauce is the most important part of the whole cooking process, establishing the unique signature of every fine Italian chef. Nothing ruins an Italian feast worse than a sauce that is thin or bland. That's why each day, our sauce is made fresh, onsite at both locations, by owners Pete and Frank Candela, to ensure the essence of the Candela family is in every pizza or entree.
Using Domenico Vitale plum tomatoes, Candela creates the rich and savory sauce that has become a staple in the Greater Princeton area. Domenico Vitale is located in the rich agricultural plains of Naples, Italy. We import our tomatoes from Italy to guarantee all the sauces we create are of genuine Italian quality.
Meats
Thumann's Meats have been a famous New York/New Jersey deli tradition since 1949. Based in Carlstadt, New Jersey, Thumann's Meats have provided the freshest and leanest quality deli meats in the area. Packaged and cut by hand by Thumann's expert butchers, Thumann's helps continue the tradition of tantalizing lunch meats that have made Candela hoagies a timeless favorite. Thumann's continued outstanding service has kept them a part of the Candela family for decades.
